About this spice
Ceylon cinnamon quills are made by peeling the paper-thin inner bark from the shoot, drying it, and rolling many sheets together by hand. That is why a true quill crushes easily between your fingers and shows ten or more layers at the cut end.
The 75 g pouch is the working size: enough quills for a season of chai, mulled wine, rice pilau, and stewed fruit. The flavour is sweeter and more floral than the cassia sold as ordinary cinnamon, with far less of the sharp bite.
These are C4 grade quills. The letter and number describe the roll rather than the quality: C4 is slightly wider than the slim C5, which makes it easier to handle and to snap by hand.
Grown and packed in Sri Lanka, certified organic, and packed in a resealable kraft pouch.
