About this spice
A clove is an unopened flower bud, picked just as it turns from green to pink and then dried. The round tip is the head, and it holds most of the volatile oil. Cheap clove is often stem-heavy and dusty; this lot is specified at a minimum of seventy percent heads.
Press a clove with a fingernail and a good one leaves an oily mark. That oil is where the warmth in a biryani, a ham glaze, or a cup of chai actually comes from.
